| Microbial Source Tracking Microbial Source Tracking (MST) is the heavy artillery in our arsenal of tools to solve spoilage problems. Briefly, MST uses a complete microbiological survey of the plant or processing environment and DNA finger printing of organism isolates to locate the probable source(s) of contaminating microorganisms. The sources might be ingredients, processing waters, conveyor belts or other container handling equipment. Post-process sources are usually indicated by finding heat-labile types of spoilage organisms in the initial cause of spoilage examination; MST will help to find the source in the post-process environments.
